Selling pork by the side works great for us because it reduces the amount of time spent marketing, transporting and selling individual cuts. However, a full side of pork is a bit much for most people. Plus there is the un-ending confusion over hanging weight, finished weight, processing costs, etc.
So, in order to make the whole process a little more manageable for most families we are going to try selling what I'm calling the 'no-mystery 1/4 pork'. Instead of giving you an estimated weight and price on a side (half) of a pig, we are going to sell 1/4 pig boxes where the weight and price is fixed.
Here's what you get:
6 pounds of smoked bacon
8 pounds of sausage (your choice of flavor)
16 pounds of pork (you choose the mix of chops, roasts and ground)
The total cost will be $180, due on delivery. Boxes will be ready starting in late October.
